Bitters are the salt and pepper of mixology. A single dash can bridge disparate flavor elements, tying together heavy oak tannins with bright citrus high notes.
Anatomy of a Bitter Formula
Every house bitters formulation relies on four distinct structural components:
1. Bittering Agents (50% backbone): Gentian root, cinchona bark, wild cherry bark, or dandelion root.
2. Aromatics (30% profile): Allspice, star anise, black cardamom, cinnamon, or coriander seeds.
3. High-Proof Solvent (100% vehicle): Always use high-proof neutral spirit (151 to 190 proof) to rapidly pull essential oils without introducing cloudiness.
4. Dilution & Sweetening: Water reduction and caramel syrup or rich honey to bring final proof down to 45% ABV.
